Grilled Veggies and Goat Chees

Bread type: Fuccacia (Toasted)
Ingredients: Eggplant, Zucchini, Red Onions, Asparagus, Red Pepper, Portabello Mushroom, Goat Cheese, Sundried Tomatoe Pesto, Basil Pesto.
Time to make (approx): 30 minutes

Freeze goat cheese about an hour before making this sandwich, so it would be easy to cut.
grill all veggies, and let cool down. on fresh Fuccacia bread spread Sundried Tomatoe Pesto on one side and Basil Pesto on the other side. add the grilled veggies, cut the Goat Cheese and put on top of the veggies. toast until the cheese is melted.
